Michelin Guide 2025: A New Wave of Stars for French Gastronomy
The Michelin Guide 2025 unveiled its new distinctions during a prestigious ceremony held at the Metz Convention Center on Monday, March 31. This essential event for French haute cuisine brought together the country’s most renowned chefs, eager to discover this year’s rankings.
A Rich and Diverse Selection
A total of 78 new stars were awarded, including 57 first stars, 9 second stars, and 2 third stars. Additionally, 10 Green Stars recognized establishments committed to sustainable gastronomy.
The New Three-Star Restaurants
Two chefs have joined the elite of French gastronomy by earning a third star:
Christopher Coutanceau for his eponymous restaurant in La Rochelle, reclaiming his title lost two years ago.
Hugo Roellinger for “Le Coquillage” in Saint-Méloir-des-Ondes (Morbihan).

First Stars: Recognition for Emerging Talent
Among the 57 newly starred restaurants, several promising chefs stand out, including Valentina Giacobbe, who not only earns her first star for her restaurant Ginko in Lille but also receives the Michelin Young Chef of the Year award. Other rising stars, such as Adrien Cachot with “Vaisseau” in Paris and Sarah Mainguy with “Freia” in Nantes, also make their debut in the prestigious selection.

Beyond the stars, several special awards were presented:
Service Award: “Le Jules Verne” (Paris) and “Ébullition” (Montpellier)
Sommelier Award: Jean Dumontet and Maëva Rougeoreille
Mentor Chef Award: Bernard Pacaud
Passion Dessert Award: Given to ten establishments
Green Stars: Ten restaurants recognized for their eco-friendly commitment, bringing the total to one hundred
